If you love a bit of spice with your pasta, you’ll love this Slow Cooker Chicken Fajita Pasta recipe. It’s delicious, simple and perfect for lunch or dinner.

I don’t know about you, but I’m always on the hunt for something a little bit spicy, but still delicious, for my taste buds. And honestly, you can’t beat the combination of pasta, chicken and that fajita flavor. I’ve been known to add even more spice to recipes, but I’ll leave that up to you!

Slow Cooker Chicken Fajita Pasta

Trust me, your taste buds will love each and every bite!

INGREDIENTS TO MAKE SLOW COOKER CHICKEN FAJITA PASTA

  • 1 red, yellow or green Bell Pepper, cut up
  • 1 teaspoon Ground Cumin
  • 1/2 – 1 teaspoon garlic powder
  • salt & pepper, to taste
  • 1 can of Diced Tomatoes, drained
  • 5-6 chicken breasts
  • 1  red onion, sliced
  • 2 Cans Cream of Mushroom Soup
  • 1 box Spaghetti or Angel Hair pasta, cooked and drained
  • 2 1/2 – 3 cups pepper jack Cheese, shredded (or any type of cheese that you’d like)
  • 3/4 C Chicken Stock (or water)

HOW TO MAKE CHICKEN FAJITA PASTA

To begin, add your pepper, onion, spices, chicken, cans of soup and 1 – 1 1/2 cups of your shredded cheese in your slow cooker. Mix everything together so it all cooks evenly and quickly.  Cook on high power for about 4 hours or so. Your goal here is to make certain that the chicken is cooked thoroughly.

Once the chicken is cooked, you need to remove the cooked chicken and shred or chop up into smaller pieces. Once that is done, add back to your slow cooker.

Stir everything together that’s currently in the slow cooker.

Add in your cooked noodles, can or tomatoes (if you have fresh ones, chop those up and use them instead!) and the rest of your cheese that you didn’t use originally.

Mix everything together, add in some of your liquid (chicken stock or water) if needed if too dry or sticky, then turn your slow cooker down to low and cook for another 30 minutes.

Once done, it’s ready to eat and enjoy!
