Slow Cooker White Bean Soup

The cold weather is here and that means one thing! It’s time for all things soup in your slow cooker! This Slow Cooker White Bean Soup is the perfect way to end any chilly day.

Cooking soups up in the slow cooker is one of my favorite things to make. There’ just nothing like that smell wafting through the house and tempting you all day long. Cooking it low and slow during the day just really does enhance the excitement of making it something that everyone will love for dinner.

And the great part about making this slow cooker bean soup is that it’s really super easy as well. If you’re looking for a great recipe that offers a ton of flavor, this is the one for you.

Slow Cooker White Bean Soup

Just gather up your ingredients to get started!

Ingredients needed for slow cooker white bean soup

  • 1 tablespoon olive oil
  • 1 package thinly sliced smoked andouille sausage (12.8 oz)
  • 3 cloves garlic (minced)
  • 1 onion (diced)
  • 3 carrots (peeled and diced)
  • 2 stalks celery (diced)
  • 2 cans (15-oz) Great Northern beans (drained and rinsed)
  • 1/2 tsp dried oregano
  • 2 bay leaves
  • 4 C chicken broth
  • 2 C water
  • Salt and black pepper (to taste)
  • 3 C baby spinach

How to make this easy slow cooker soup

Add olive oil to the skillet on medium-high heat. Carefully add sausage stirring often until the sausage is cooked and lightly browned. (about 3-4 min)
Transfer the sausage to the slow cooker. Add garlic, onion, carrots, celery, beans, oregano, and bay leaves. Add the can of broth and the water, Stir to combine all ingredients. Add salt and pepper to taste.
Stir well.
Cover while cooking on low heat. Continue to cook for 7-8 hours. (Or cook on low heat for 3-4 hours)
Add spinach. Stir until the spinach is wilted.
Serve while hot.
