- 1 lb Brussels sprouts, trimmed and halved
- 1 lb fingerling potatoes
- 3 boneless skinless chicken breasts
- 2 tablespoons balsamic glaze
- 1/2 cup low-sodium chicken broth
- 1/4 cup light brown sugar
- 1 teaspoon thyme
- 1/2 teaspoon rosemary
- 1/2 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- sea salt & pepper to taste
- 2 cloves minced garlic
- Freshly chopped parsley, for garnish
How to make Slow Cooker Balsamic Chicken
In a large slow cooker, add Brussels sprouts and potatoes in an even layer, and place chicken on top.
In a bowl, add the balsamic glaze, chicken broth, brown sugar, thyme, rosemary, oregano, and crushed red pepper flakes, salt, and pepper. Gently whisk. Allow to sit for 2 minutes, and then gently whisk again.
Pour marinade over chicken and vegetables. Scatter all over with garlic.
Cover and cook on high until chicken is cooked. You can test chicken with a fork to see if falls apart easily. This should take about 4 ½ hours.
Garnish with parsley and serve with the juices from the slow cooker.
